Hotel/Restaurant Opening
After many years of hotel opening experiences, having been part of the Ritz Carlton rose Hall opening team in Jamaica, the Carlisle Bay Antigua opening team and Hermitage Bay Antigua opening team, chef Dezi has amassed a wealth of experience and knowledge in building a team, planning, organizing, developing and implementing policies for opening new hotels and food and beverage operations. In addition Chef Dezi has done consultancies for Olive Branch, and Caterers Choice which included kitchen design and layout for a new kitchen to accommodate catering and in-person cooking classes. Our overall services, include food and beverage assessment with recommendations, menu planning and overhaul, kitchen redesign and layout for more efficient flow of service. Previous consultancies also include working with an Antiguan Hotel chain to build a new kitchen for efficient operation and service as well as opening of a new restaurant on the beach. As a consultant, I am also able to provide management support in property negotiations for operations takeover under new management.

Training
As a certified Hospitality educator, ACF and WAC certified executive chef, Dezi has served as Consultant Tutor to Antigua Barbuda Hospitality Training Institute (ABHTI) to restructure the culinary program to include better delivery of the curriculum with addition of increased hours of practical training for graduates.
We can provide Serve safe training, menu reviews and menu engineering, service procedure and training for the food and beverage operations. We can also provide training on more modern efficient plating techniques for faster service and better eye appeal as well as flavor and taste development for more balanced dishes.
Our team can provide full service food and beverage training on the job as well as scheduled team building training on the psychology of teamwork and the dynamics of team mentally.
